Lemon Cucumbers for Pickles

These are a fun cucumber to grow,

and have produced better, in the garden, than our English cucumbers. They do not taste like lemons, but have a nice  fresh taste with a crunchy texture

so I thought they might be good for pickles 🙂

We used the same recipe from last year and doubled it, mixing Lemon cucumbers with a couple English.

I ran out of peppers so made them with out, hoping it wont change the flavor too much…

Bread & Butter Pickles

8 medium cucumbers

2 green peppers

8 small white onions

½ cup salt

Pickling Syrup:

5 cups sugar

1½ teaspoons turmeric

½ teaspoon ground cloves

1 tsp celery seed

2 tablespoons mustard seed

5 cups apple cider vinegar

Cucumbers, Onions & Green Peppers chopped up mixed with salt and a few handfuls of ice, cover & let it sit for 3 hrs

Drain and mix together with Pickling Syrup

Heat through but don’t boil.

Prepare your jars & lids, fill them and use a hot water bath to seal the jars.

Wait 5-6 weeks before opening, if you can 🙂
