Vegetable Garden Update

Where did Summer go! Wow! Fall is here! Just wanted to catch-up with whats happening here in the garden, with a look at some of our summer treats!

Tomatoes! Lots more to come! My favourite way to preserve them is Slow Roasting, for sauce and confit!

Cucumbers, Jalapeños and Thai Dragon peppers have been pickled & Candied!

Scarlet Runner Beans, Eggplant and Zucchini have been Roasted as well! Mostly for soup!

They will all be a lovely taste of summer in the middle of winter!

         

We’ve made Pesto, Spiralized, Grilled, Roasted and tossed Veggies in Salads!

       

Thoroughly enjoying our harvest!

Oh , yes ,Garlic did well, and the Tromboncino Squash was fun to grow! Look at the length  of it!

We grew enough Zucchini and Squash this year that we were able to cook the blossoms ! My frying skills are not good but it didn’t matter, they were amazing stuffed with cheese , fresh herbs and lightly fried! How Decadent!

 

Im also drying herbs and hot peppers.

  

I just gathered these baskets and apples 2 days ago, there is still plenty growing and seeds that have just been started!

  

Loved these flowers this year! Sad to see them go but ” To Everything There is A Season! ”

Vegetable Garden Update – Aug 2013

We’ve had to do some cleaning up…

The bed on the right had Kale  till about 2 weeks ago, it was all getting too big and covered in aphids, the raspberries were disappearing in behind them , fall broccoli and cabbage is in there now.

The greenhouse has been cleared out tomatoes and cucumbers were over crowded and cucs had a terrible amount of mildew, so sad they produced really well ” Note to self” Don’t overcrowd the green house next year!

Fairy Tale Eggplant are slow, we have white fly on them…we’ve tried garlic water , it doesn’t work…so we’ve had to resort to a commercial spray, its better but not perfect..

Butternut Squash has bounced back , I thought they were gone since the mildew was a huge problem when they were smaller, but with some extra TLC..

some of the baby squash were falling off so I’ve been assisting with pollination , we now have several that are growing..

we have Zuccini plants.. finally beat the slugs..lol…now lets see if there is still time for this veggie to grow! Purple Pole Peas are behind them..

Celery is looking really good,  and the yellow runner beans are finally doing well, late but again they were planted a few times thanks to critter’s..

Organic Shallots , what would these cost you in the store?

They look like they are finished growing but they haven’t they will divide into several more shallots, they are a slow growing crop but worth the wait!

Another experiment for us…we have a new composter!  Second hand, new one..so excited to try it out . I love the design, its off the ground so it will stay neat and tidy , add the material and turn…ideal for our small yard looking forward see how it works!

Bread & Butter Pickles

Here’s the recipe as promised…

I made these with Sweet Success Cucumbers, fully grown. This is considered to be a slicer cucumber not usually recommended for pickles, but they worked beautifully for this recipe!

I found it on another blog, an old family favourite of theirs, dating back to what they think may be the 1800’s..how cool is that and they are still making them!

This is so simple..

Cucumbers, Onions & Green Pepper chopped up mixed salt and a few handfuls of ice, cover & let it sit for 3 hrs

Drain and mix together with Pickling Syrup

5 cups sugar

1½ tsp. turmeric

½ tsp. ground cloves

1 tsp. celery seed

2 tbsp. mustard seed

5 cups apple cider vinegar

Heat through but don’t boil..

Done , fill jars and can , I use a hot water bath to seal the jars 🙂

We have had a consistent production of Strawberries, loads of cucumbers and tomatoes

so many cucumbers at one time … I really didn’t know what to do with them

I did some research with Google,  on making pickles , most didn’t recommend using slicers cucs , eventually, I found this old recipe, from the 1800s for Bread & Butter Pickles..so decided I didn’t have much to lose  and made it, with some help…

We’ve visited some local markets , these sunflower sprouts are so good , I have to grow some. We finally have some young zucchini plants , this is the 3rd attempt after losing the rest to slugs, so we may have our own zucchini yet and we have just picked the first of the eggplant!

Learned how to grow a 600 lb. pumpkin at a local farm. They hope it’ll make it over 900lbs..crazy!

Tried more new recipes …Chia Blueberry Jam, Have to admit, this is a healthy alternative but it’s not a favourite . I made another batch of good old-fashioned cooked Blueberry Jam, it is the best, in my opinion.
